Retro Dartington Avocado Dishes FT137
The lights are low, tapered candles lit, the aperatif served chilled and now you carefully place the hors d'oeuvre in front of your enchanted guest. Your plump and succulent avocado drizzled with vinaigrette (see recipe below) are made all the more inviting by their serving dishes - handmade Dartington Glass (now known as Dartington Crystal) avocado dishes, designed by Frank Thrower.
But Dartington Glass is not only last century because of its association with 70s high cuisine. We like it because the company was set up in the late 1960s to revitalize the local economy in North Devon at a time when the big cities were sucking the life out of smaller communities.
This pair of clear glass, handmade, genuine retro avocado dishes mimic the pattern of avocado skin on their external surface.

Avocado Beetroot Salad
4 oz. cooked beetroot, 2 oz. celery, French dressing, 2 avocado pears, fresh lemon juice, salt and pepper. Peel and wash and slice beetroot finely, and combine with finely chopped celery and French dressing. Sprinkle the halved, stoned avocados with lemon juice and salt and pepper to taste, and fill with the mixed vegetables.
Half an avocado per person, 5 parts good olive oil, one part wine vinegar, salt and pepper. Combine the oil and vinegar (an easy way is to pour both ingredients, with salt and pepper, into a screwtop jar, and shake vigorously). You can vary the sauce by using sugar, garlic etc. Pour vinaigrette sauce into avocado cavities and serve.
